Pork chop with white beans, rosemary, and apple  Ingredients - 4 pork chops - pork seasoning (1 tsp each salt, ground cumin, ground coriander seeds, smoked paprika, mustard powder, and a few grinds of black pepper) - 1/4 head red cabbage, thinly sliced - 1 red onion, thinly sliced - 2 green apples, diced - 1 large sprig of rosemary, finely chopped - 3 tbsp olive oil - 2 tbsp red wine vinegar - 500ml (approx. 2.1 cups) chicken stock - salt and pepper, to taste - 500g (2 cups) cooked white beans - dill, for garnish - optional: fennel pollen, for garnish Method 1. To prepare the white beans and cabbage, heat the olive oil in a pan. Once hot, add the onions and sauté for 3 minutes. 2. Add the rosemary and season with salt. 3. Incorporate the cabbage, vinegar, and stock, seasoning again with salt and pepper. Simmer for 10 minutes. 4. Season the pork chops and grill over medium-high heat for 6-8 minutes on each side. Allow them to rest for 6 minutes after cooking. 5. Once the cabbage has simmered for 10 minutes, stir in the apples and white beans. Heat until the beans are warmed through. 6. To serve, plate some of the bean mixture, garnish with dill, and place a pork chop on top. 7. Drizzle with a splash of high-quality olive oil. Enjoy! #cooking #Recipe #pork #fyp

Home made ricotta  Ingredients - 2L full-fat milk - 0.5 tbsp sea salt - juice of 1 medium-sized lemon Method 1. Add the milk to a large pot with a lid and turn the heat to medium. 2. Stir the milk constantly and bring the temperature to 85°C / 185°F. 3. Turn off the heat and add the salt. Stir until the salt has dissolved, then add the lemon juice and give it one last stir. 4. Place the lid on and let it sit for 20 minutes. 5. After 20 minutes, strain everything from the pot through some cheesecloth. Make sure you leave it for 20 minutes to get most of the whey out. 6. There you go, fresh ricotta. Hot tip: the whey makes a great brine for chicken. #cheese #cooking #fyp #Recipe #fyp #viral

Lahmacun Ingredients - 300g (10.6 oz) plain or AP flour - 5g (0.2 oz) instant yeast - 0.5 tsp sugar - 1 tsp salt - 180ml (3/4 cup) water - 300g (10.6 oz) lamb mince - 2 tomatoes, grated - 1 onion, finely diced - 2 cloves garlic, finely grated - small bunch of parsley, chiffonade - 2 tbsp yoghurt - 1 tsp salt - 1 tsp black pepper - 1 tsp cumin - 1 tsp paprika - lemon and parsley, to serve Method 1. Place the flour, yeast, sugar, and salt into the bowl of a stand mixer (if you don’t have a mixer, just use your hands in a bowl). 2. Add the water and mix on medium for 4-5 minutes or until the dough is smooth. 3. Roll the dough into a ball, place it back into the mixing bowl, and cover with a tea towel. Leave it at room temperature for 1 hour or until it has almost doubled in size. 4. While that's proofing, prepare the topping by mixing all the other ingredients in a separate bowl. 5. Once the dough is proofed, divide it into 6 even portions and roll each tightly. Cover and leave to rest for 10 minutes. 6. Preheat your pizza oven to 400 c/750 f or your oven to its maximum temperature. If using an oven, you will need a pizza stone, heavy tray, or cast iron pan inside the oven as well. 7. Roll out each dough ball very thinly, then spread the mince mixture thinly, leaving a 1cm edge around the outside. 8. Place into the oven for 3-6 minutes, depending on its temperature. You are looking for a nice colour on the dough and for the meat to be cooked through. 9. French Dip with @albert_cancook !  Ingredients - 400g (14 oz) beef steak (I used Sirloin/strip loin) sliced thinly - 2 small brown onions, thinly sliced - 3 cloves garlic, crushed - Small bunch of thyme - 500ml (2.1 cups) beef stock - 10ml (2 tsp) liquid aminos (or Maggi seasoning) - 12 slices of provolone cheese - 1 long hoagie roll or French stick Method 1. To make the dipping sauce, add half of the sliced onions to a pan over medium heat and cook until they just soften and start to brown. 2. Add the garlic and thyme, followed by the beef stock and aminos. Reduce by half. (The sauce should taste slightly salty, which balances when eaten with the bread.) 3. Cut the roll in half and drizzle with olive oil. Toast on a hot flat plate over high heat. Once toasted, set aside. 4. Next, add some oil and the remaining onions to the hot plate. Cook for 2-3 minutes and push to one side. 5. Add the beef to the hot plate and season well with salt and pepper. Cook for 3-4 minutes or until it has some colour. 6. Once the beef is almost done, add the onions on top followed by the cheese. Let the cheese melt, then place the toasted roll on top and flip the whole thing. 7. Pinwheels! They are often made with flank steak (also a great option). This time, I used the ribeye cap, which in my opinion is one of the tastiest pieces of meat on a cow. Trim the ribeye cap, then season it with salt and pepper. Lay some thin slices of garlic, spinach leaves, prosciutto, and provolone cheese. Roll tightly and tie with butcher's string. Start by searing in a pan, then transfer to a 200°C (395°F) oven for around 25-30 minutes or until it reaches an internal temperature of 48°C / 118°F (for medium rare). Nachos  Nachos ingredients: - 1 bag corn chips - 2 cobs grilled corn - 1 red onion, thinly sliced - 1 jalapeño chilli, thinly sliced - queso cheese sauce (recipe below) - 1 avocado - 1 lemon - 200ml sour cream - tajín - cooked seasoned ground beef (recipe) Method: 1. Lay a portion of the corn chips on a tray and then layer with beef, queso, corn, onions, and chilli, repeat until all ingredients are used.  2. Top with guacamole (mix together the avocado, lemon, salt, pepper and Tajín) and sour cream, finishing with a sprinkle of tajín! Ingredients for queso: - 50g (1.75 oz) butter - 50g (1.75 oz) flour - 500ml (2 cups) milk - 200g (7 oz) low-moisture mozzarella, grated - 200g (7 oz) Red Leicester cheese, grated Method: 1. Melt the butter in a saucepan. 2. Once melted, add the flour and whisk until smooth. 3. Gradually whisk in the cold milk, and when it starts to bubble, whisk in the cheese. 4. Season with salt and pepper. Ingredients for cooked seasoned ground beef: - 500g (1.1 lbs) ground beef - 2 tbsp olive oil - 1 tsp salt - 1 tsp ground coriander - 1 tsp paprika - 1 tsp garlic powder - 1 tsp oregano - 1 tsp Tajín Method: 1. In a large frying pan, heat the olive oil and add the meat. 2. Break the meat up well, then season it with all the spices. 3. Vegemite Scrollls with @Joshua weissman  Ingredients: - 240g (2 cups) flour - 5g dry yeast - 1 tsp salt - 1 tsp sugar - 1 tbsp olive oil - 240ml (1 cup) warm water (start with just under 240ml and adjust based on the dough's consistency) - 200g Vintage Cheddar, grated - Vegemite - Gauge the amount based on your preference. If unfamiliar with Vegemite, it's best to start with a lesser amount. Garlic Butter: - 100g butter - 3 garlic cloves, crushed - 1 chilli, finely diced - A small handful of parsley, finely sliced Method: 1. Using a mixer with a dough hook, combine all the dry ingredients. 2. Gradually add the water, starting with roughly 180ml (3/4 cup). If the mixture appears dry and doesn't come together, add the remaining water. 3. Knead the dough in the mixer on medium for 6-8 minutes, or until it becomes smooth. 4. Cover the bowl with a towel and leave it to prove at room temperature for an hour or until it has doubled in size. 5. Once doubled, transfer the dough onto a floured surface. Use a rolling pin to roll it out to a thickness of 0.5cm. 6. Spread Vegemite on one side of the dough, leaving a 3cm border along one edge (warming the Vegemite in the microwave beforehand makes it easier to spread). 7. Evenly sprinkle the cheese over the Vegemite. 8. Begin rolling the dough from one end, forming a log shape. 9. Cut the log into 9 equal segments and place them onto a lined baking tray, spaced at least 3-4cm apart. 10. Bake in a preheated oven at 200°C (392°F) for 20 minutes. 11. For the garlic butter, combine all ingredients in a pot. Once the butter has melted, it's ready. 12. As soon as the scrolls are out of the oven, brush them with the garlic butter. 13. Banoffee Pie 🥧 Ingredients: - 200g (7 oz) butter - 450g (1 lb) digestive biscuits - 2 tins condensed milk - 4 bananas, sliced - 600ml (2.5 cups) cream - 2 tbsp icing sugar - chocolate, to garnish Method: 1. To make the caramel, boil the tins of condensed milk for 3 hours, then allow to cool completely. I left it overnight. 2. To make the base, place the digestive biscuits into a food processor and blend until they reach a sandy consistency. Next, pour in the melted butter and mix until well incorporated. 3. Turn out into a 26cm (10-inch) fluted tart pan and press evenly onto all sides. Use a flat-bottomed glass to get the base really flat. Place this into the fridge to chill for 1-2 hours. 4. Pour in the cooled caramel and spread it evenly across the base. Then, layer it with the sliced bananas. 5. Whip the cream with the icing sugar and then top the pie with it. 6. Smoked Beef Cheeks  Ingredients: - 6 beef cheeks, trimmed of any silver skin - 1L beef tallow - salt and pepper to season (50/50 in volume). Feel free to use any rub you have. Method: 1. Preheat your smoker to 135°C/275°F. 2. Pat dry the cheeks and use some melted tallow on the outside as a binder, then season well with salt and pepper or any rub of your choice. 3. Place the cheeks onto the preheated smoker and cook until you have an internal temperature of 76°C/170°F. This should take around 4 hours, but go by temperature, not time. 4. Once they are at 76°C/170°F, place them on a tray (note: the tray I used was a little too big) with the tallow and continue to cook for another 2-3 hours or until they reach a temperature of 96°C/205°F and you can easily push a probe into the meat. 5. Ingredients: - 1/2 daikon, sliced 1cm (0.4 inches) thick - 1 carrot, cut into 2cm (0.8 inches) chunks - mushrooms of your choice (I used king oyster, shiitake, enoki, and black fungus mushrooms) - 1L (34 fl oz) chicken stock - 1 tbsp miso paste - 6 slices of lotus root - 400g (14 oz) chicken mince - 3 spring onions, sliced - 1/2 tsp white pepper - 1 tsp sesame oil - 1 tbsp soy sauce - 8 raw prawns, peeled and deveined - 1 head bok choy Method: 1. Start by arranging the daikon, carrot, and mushrooms in a clay pot or saucepan. 2. Pour in the chicken stock and add the miso paste. Turn the heat to medium and let simmer for 20 minutes. 3. Meanwhile, in a bowl, mix the chicken with the spring onions, white pepper, soy sauce, and sesame oil. Form the mixture into balls and place them into the chicken stock after the first 20 minutes of the broth cooking. 4. Cook the chicken balls for 10 minutes before adding the prawns. Continue cooking for a further 5 minutes. Add the bok choy and let it cook for 3 more minutes. 5. Serve while it's still hot. Japanese style fried rice  Ingredients - 200g (7 oz) pork belly, skin off and diced - 6 cloves garlic, finely diced - 2 spring onions, finely sliced - Small knob of ginger, finely grated - 2 eggs, whisked - 3 tbsp peanut oil - Pinch of salt - Small pinch of white pepper - Pinch of MSG - 2 tbsp soy sauce - 2 cups (approximately 475g) cooked, cold medium grain rice Method 1. Place a wok or large frying pan on a medium heat and add the oil. 2. Add the garlic and cook until it turns a golden colour and becomes crispy. Remove and set aside, pouring the garlic-infused oil back into the wok. 3. Now add the pork belly to the wok with a pinch of salt, and cook until golden brown. Remove and set aside, retaining the fat. 4. Add the eggs to the wok and scramble. Once done, set them aside. 5. On high heat, add some of the pork fat to the wok along with the spring onions, ginger, and rice. Cook for 1 minute, stirring to prevent sticking. You can add more fat if required. 6. Return the pork and eggs to the wok and cook for another 2 minutes. 7. Season with salt, pepper, MSG, and soy sauce, then cook for an additional minute. 8. Chilli oil noodles 🍜  Ingredients - 280g flour - 160g warm water - A pinch salt - 3 tbsp veg oil - 2 cloves garlic, minced - 2 spring onions finely sliced - 1 tsp chilli flakes - 0.5 tsp cumin seeds - 0.5 tsp Szechuan peppercorns Method 1. Start by making the dough. In a mixing bowl place the flour and salt. Make a well in the centre and pour in the water. 2. Mix until it comes together and you have a shaggy dough. Then turn it out and knead for 6-7 minutes or until you have a smooth dough. 3. Cut into 4 pieces and roll into rounds. 4. Pour 0.5 tsp of oil into a bowl and place the dough ball into it, cover and let rest for 1 hour. 5. When ready, place a large pot of salted water on to boil, and the remainder of the oil in a small pot to heat. 6. Working with one dough ball at a time, flatten it out then make a divot in the centre with a chopstick. Then grab each end and pull to stretch it. Once you have pulled it to around 1 metre, tear the strip in half. 7. Place the pulled noodles into the boiling water and cook for 3-4 minutes. 8. Place the garlic, spring onions, chilli, cumin and Szechuan peppercorns into your bowl. 9. Carefully pour the hot oil over the spices and veg in the bowl before adding in the cooked and drained noodles.
